I'm a big fan of pasta. However, I try to make smarter choices to give my body what it needs to be healthy. My solution? Zucchini linguine! Zucchini is often confused as a veggie, but it's actually a fruit. Zucchini is loaded with so many vitamins! It's high in:
- vitamin C
- vitamins B2, B1, B6
- vitamin A
- zinc
- niacin
- calcium
- omega-3
Zucchini also contains a significant amount of potassium, folate, fiber and protein. You can use a veggie spiral slicer or you can use your own peeler from home. So opt for the waistline-approved zucchini linguine and pair it with your favorite sauce or topping! Bon appétit !
